Toast with Leeks and Prawns

1 stalk Leeks
1 garlic clove
2 Tbsps vegetable oil
1 Tbsp butter
1 Beefsteak tomato
salt

8 leaves Basil (briefly fried)
4 thin slices Ciabatta
8 King prawn (ready to cook, deveined)

Preparation
1.

Toast bread slices in a preheated oven at 180°C (approximately 350°F). Remove from oven and let cool.

Blanch tomatoes in a little boiling water, then rinse, peel, cut into quarters and remove seeds. Press tomatoes slightly to flatten and season with salt and pepper.

Rinse, trim and cut leeks in half lengthwise. Cut leeks crosswise into strips. Peel and finely chop garlic. Heat oil and butter in a frying pan. Add garlic and leeks and sauté, without browning, about 5 minutes.

Season leeks with salt and pepper, add prawns and cook over low heat until cooked through. Remove prawns. Place toast slices on warmed plates and top with leeks. Place tomato slices on leeks and top each decoratively with a prawn. Serve garnished with basil leaves.
