Toast with Avocado Cream
Toast bread slices to taste and allow to cool. Halve 2 avocados, remove pits, scrape avocado with a spoon from the peel, place in a bowl, mash with a fork and season with salt and pepper. Add balsamic vinegar to the bowl and stir until smooth. with balsamic. Peel remaining avocado, halve and cut into 16 slices for garnish. Rinse tomatoes and cut into quarters.
Rinse cress, shake dry and cut with scissors. Spread avocado mixture onto toast with a knife and cut toast diagonally. Cover with avocado slices, tomato and cress. Arrange on plates or boards and serve.
