1 Tbsp Mustard
3 Tbsps grapeseed oil

Preparation steps

Peel onions and cut into rings. Sauté onion rings over medium heat in melted butter. Cover and simmer over low heat, stirring occasionally, about 15 minutes. Onions should not brown.

For the dressing, whisk apple cider vinegar with apple juice, mustard and grape seed oil. Season with salt and pepper. Mix dressing with warm onions and let cool.

Meanwhile, cut radicchio into quarters, remove core and cut into strips. Rinse and drain well. Cut Appenzeller cheese into slices ​​and coarsely chop nuts.
