- 1 bunch thyme
- 1 kilogram button Mushroom (fresh, brown)
- 4 Tbsps Cognac
- 150 milliliters balsamic vinegar
- 50 milliliters olive oil
- salt
- peppers
Preparation steps

Rinse the thyme, shake dry and pluck the leaves from the stems. Rub the mushrooms with a paper towel to clean. Heat the oil slowly in a pan with half of the thyme - do not fry the thyme. Add the balsamic and Cognac and bring to a boil. Reduce to about 2/3.

Pour through a strainer over to the mushrooms in a bowl. Mix well and add the remaining thyme. Let soak for at least 15 minutes. Mix again and season with salt and pepper. Spread on saucers to serve. Goes well with bread.
