- 1 cup dried Prune (soaked in hot water)
- 1 cup raisins (soaked in hot water)
- 2 Tbsps cocoa powder
- ⅔ cup all-purpose flour
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp salt
- 1 cup blanched almonds
- 1 cup blanched Hazelnuts
- 1 cup soft light brown sugar
- ½ cup honey

Preparation steps
1.
Preheat the oven to 150°C (130° fan)|300F|gas 2. Grease and line a 18 cm | 7" with greaseproof paper.
2.
Blitz the prunes and raisins in a food processor with some of their soaking liquid until smooth. Set to one side.
3.
Combine the cocoa powder, flour, spices, salt, and nuts in a large mixing bowl.
4.
Stir together the sugar and honey in a saucepan. Cook over a medium heat until the sugar has dissolved and you have a golden syrup. Increase the heat and boil, without stirring, until the mixture registers 116°C|240F.
5.
Pour the syrup over the flour and nuts and mix quickly until combined. Add the pureed prunes and raisins and stir well to combine.
6.
Working quickly, scrape into the prepared tin and use damp hands to flatten the top evenly. Bake for 45 - 55 minutes until the edges start to rise slightly and appear matte.
7.
Remove to a wire rack to cool. Turn out once cool and cut into slices before serving.
