Swiss Chard Dumplings
Cut the crusts from the white bread, cut into thin slices and place in a bowl. Heat the milk, pour over the bread, cover and allow to soak for 30 minutes.
Meanwhile, peel the onion and dice into small cubes. Rinse and trim the chard and cut into 1 cm (approximately 1/3 inch) wide strips. Saute the onion in 1 tablespoon butter. Add the chard and saute about 4 minutes. Drain in a colander, put back in the pot and mash. Mix the soaked bread, the chard and the eggs with your hands. Season with salt, pepper and nutmeg and form into dumplings.
Bring a large pot with plenty of salted water to a boil. Drop the dumplings into the boiling water and cook. When they rise to the surface, lift out with a slotted spoon and drain. Melt the remaining butter. Brush the dumplings with the butter, sprinkle with the Parmesan and serve with tomato sauce or tomato salad.
