300 grams prepared Sushi rice
16 small Endive
2 Nori seaweed
32 sticks Thai asparagus
salt
150 grams dried ham (thinly sliced)
soy sauce (for serving)

Preparation steps

1.

Rinse the endive leaves and pat dry. Cut the nori sheets into 8 strips.

Rinse and trim the asparagus, and blanch in boiling salted water for 5 minutes. Remove, rinse in cold water and drain well.

3.

Place the endive on the work surface. Form the rice with wet hands into 16 oblong shapes. Roll the slices of ham into thin rolls. Place 2 pieces of asparagus on a rice oblong and place a roll of ham on top. Wrap the rice, asparagus, and ham in a strip of nori and lay on top of the endive. Serve with soy sauce and wasabi paste.
