8 dried Apricot (sliced)
1 cup Pecan
2 cloves garlic cloves (crushed)
1 red chili pepper (finely chopped)
1 handful flat-leaf parsley (chopped)
3 Chives (chopped)
½ cup olive oil
2 lemons (juice)
1.333 cups Feta (crumbled)
1 cup sliced Strawberries

Preparation steps

1.
Prepare the couscous according to the directions on the packet.
2.
Mix the couscous with the apricots and pecan nuts.
3.
Mix together the garlic, chilli, parsley, chives, olive oil and lemon juice and add the crumbled cheese. Cover and set aside for 1 hour.
4.
Mix the cheese dressing into the couscous and spoon into a salad bowl.
5.
Garnish with strawberries.
