You can also add a little bit of honey for some added sweetness and sprinkle some cocoa powder over the top for a beautiful finish.

- ⅜ cup cream (48% fat)
- ⅔ cup white sugar-free chocolate (finely chopped)
- 2 Tbsps sugar-free peach Jam
- ½ tsp dried Lavender (finely crushed)
- 2 cups plain Dark chocolate (chopped)
- pink Sea salt flake
Preparation steps
1.
Heat the cream in a pan and bring just to a boil. Remove from the heat and add the white chocolate, stirring until melted and smooth. Set aside to cool.

Stir in the peach spread and lavender until blended, then chill.
3.
Polish the insides of 18-20 small chocolate molds.
4.
Melt the plain chocolate in a heatproof bowl over a pan of simmering (not boiling) water.

Spoon a little of the melted chocolate into the moulds and brush up the sides of the moulds to coat evenly. Invert onto the tray and chill for about 20 minutes until set.
6.
Divide the peach filling among the chocolate shells. Chill for 5 minutes.
7.
Reheat the remaining chocolate as before and spoon the chocolate over the filling to cover. Chill for 15 minutes until set, then unmould and decorate each one with a pinch of sea salt.
