- 2 trout
- salt
- peppers
- 1 small, unwaxed lemon (thinly sliced)
- 1 small, unwaxed Orange (thinly sliced)
- 1 small onion (thinly sliced)
- 1 bunch thyme
- 1 clove garlic cloves (finely chopped)
- 4 rashers fatty Bacon (streaky, American)
- 1 Tbsp Oil
- To garnish
- Lemon wedge

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4.
2.
Score each fish 3 times on one side with a sharp knife. Place the fish in a baking dish, scored side up and season inside and out with salt and pepper.
3.
Stuff each fish cavity with half the thyme, a sprinkling of garlic and the lemon, orange and onion slices.
4.
Wrap 2 slices of bacon around each trout and drizzle with the oil. Bake for 20-30 minutes until the bacon is golden and the fish is cooked. Garnish with the remaining thyme and lemon wedges
