8 medium waxy potatoes
2 tsps vegetable oil
1 bunch red scallions
200 grams Bacon
1 bunch parsley
salt
freshly ground peppers

Preparation steps

Peel and rinse the potatoes, cut off the bottoms slightly and wrap in aluminum foil. Cook at 180°C (approximately 350ºF) for about 50 minutes in the oven.

Rinse the scallions, cut off the ends and cut into thin rings. Slice half the bacon into small cubes.

Remove the potatoes from the foil, cut off a lid and scoop out the flesh with a teaspoon. Mash the potato with a fork, season with salt and pepper and mix in the bacon and onion rings. Rinse the parsley, chop finely and mix half into the potato mixture.

Spoon the mixture back into the potatoes and wrap half a slice of bacon around each one. Place on a lightly oiled baking sheet and cook under the broiler for about 5 minutes until crispy.

Serve showered with the remaining parsley.
