3 Tbsps toasted Pine nuts
2 finely chopped shallots
1 Tbsp sesame oil
75 grams Brown rice
125 milliliters water
60 milliliters white wine
2 Tbsps raisins
4 sprigs finely chopped cilantro
½ tsp cinnamon
24 pickled Grape leaves
1 lemon (juiced)

Preparation steps

1.

Sauté shallots in sesame oil, stir in brown rice and sauté briefly. Add water and white wine to rice mixture, cover and simmer over very low heat for about 30 minutes. Stir raisins, pine nuts, cilantro and cinnamon into rice mixture.

Rinse grape leaves with cold water and pat dry. Slightly layer pairs of grape leaves into large sheets.

Spread heaping tablespoons of the rice mixture up centers of the pairs of grape leaves. Fold ends of grape leaves inwards and tightly roll up leaves over filling.

Place stuffed grape leaves in a saucepan, sprinkle with lemon juice and add enough water to cover. Cover saucepan and simmer stuffed grape leaves for about 30 minutes. Remove cover from pan and continue cooking stuffed grape leaves until liquid has almost cooked away, 10-15 more minutes.

5.

Let stuffed grape leaves cool in remaining liquid. Place stuffed grape leaves in a bowl and garnish with lemon slices and cilantro if desired to serve.
