- 1 Cucumber
- salt
- 2 sprigs Basil
- 1 oz pickled red Bell pepper (drained)
- 2 slices Smoked turkey breast (about 1 ounce)

Preparation steps
Rinse cucumber, wipe dry with paper towels and peel.
With a peeler, shave cucumber lengthwise into 12-14 very thin slices.
Spread cucumber slices on work surface in a single layer and sprinkle with a little salt.
Rinse basil, shake dry and pluck leaves. Reserve some leaves for garnish and cut the rest into very thin strips.
Cut peppers lengthwise into thin strips. Cut the turkey breast into long, thin strips. Mix both in a bowl with the basil strips.
Pat the cucumber slices dry with paper towels.
For each roll, arrange 3-4 slices of cucumber lengthwise next to each other, slightly overlapping.
Spread the pepper-turkey mixture over cucumbers, dividing evenly, then roll up cucumber into tight cylinders. Garnish with the remaining basil leaves and serve.
