Strawberry Crisp with Apples and Rhubarb
The tropical coconut oil contains the fatty acid lauric acid - it has an antibacterial effect and kills bacteria and viruses. Rhubarb, apples and strawberries provide plenty of vitamins and minerals.
You can adapt the healthy dessert to your taste by choosing the type of fruit.
Preheat the oven to 220°C / 425°F convection. Coat a baking dish with butter.
Peel the apples, quarter and cut out cores. Dice flesh. Rinse, trim and quarter the strawberries. Rinse rhubarb, trim and cut into small pieces. Mix rhubarb with the strawberries, diced apple, lemon juice and vanilla and pour in baking dish.
Melt the butter. Add almonds, brown sugar, flour, coconut and cinnamon and mix well. Spread the mixture over the fruit and bake until golden brown, about 20 minutes. Remove from the oven and serve hot.
