- 500 grams Rhubarb
- 1 fresh lemon (for juice)
- 1 Vanilla bean (scraped)
- 500 grams jam sugar (2: 1)
Preparation

Rinse and hull strawberries, chop. Rinse rhubarb and chop into small pieces. Combine fruit with lemon juice, sugar, and vanilla. Bring to a boil and cook for 4 minutes until bubbly.

Pour into prepared jars, cap tightly and turn upside down for 10 minutes. Store in cool and dark place until ready to serve.
