Stinging Nettle and Birch-Leaf Tea

- ½ tsp Juniper berries
- 4 tsps dried Stinging nettle
- 2 tsps dried Birch leaf
- ½ small lemon
- Sweetener
Crush the juniper berries in a mortar or with the flat side of a knife.
Put the stinging nettle and birch leaves in a pot and scald with 1 cup boiling water. Cover and let steep for 8 minutes.
Meanwhile, rinse lemon in hot water and wipe dry. Remove zest in strips with a peeler, then cut into fine strips.
Pour tea through a tea strainer into a cup or a glass. Add sweetener to taste, garnish with lemon strips and serve.

Nettles and birch leaves are not only slimming but also beautifying: both have a draining effect and contain plenty of silicic acid, which strengthens connective tissue, fingernails and hair. Juniper contributes soothing and purifying essential oils.

The tea tastes very good during the warm season, even when chilled, and is an ideal liquid companion to hearty dishes. But then perhaps sweeten more sparingly!
