- 1 red pepper (diced)
- 2 onions (finely chopped)
- 4 Tomatoes (diced)
- 1 tsp brown sugar
- 2 Tbsps lemon juice
- 4 Tbsps olive oil
- 1 Tbsp fresh Basil
- 18 large mussels (debearded)
- ⅞ cup dry white wine

Preparation steps
1.
Place the vegetables in a bowl and season with the sugar, lemon juice, oil, basil and sea salt.
2.
Place the wine in a large pot along with 3 ounces of water and bring to a boil. Add the mussels, cover, and cook on high heat until the shells open (approx. 6 minutes). Discard any unopened ones!
3.
Drain and open all the mussels and place the halves with the meat in on a platter. Top with the salsa and serve.
