400 grams Spinach
125 grams aged Goat cheese (or Feta)
1 Orange
1 Tbsp Sesame seeds
2 Tbsps lemon juice
1 tsp sugar
1 tsp salt
1 generous pinch peppers
½ tsp Mustard
3 Tbsps olive oil

Preparation steps

Rinse spinach and spin dry. Carefully peel orange with sharp knife, removing all the bitter white pith. Working over a bowl to catch the juices, cut between membranes to remove whole segments. Squeeze membranes to release more juice. 

2.

Whisk 2 tablespoons of orange juice with lemon juice, sugar, salt, pepper and mustard. Whisk in olive oil. Toss spinach with 2/3 of the dressing and place on plates with the orange segments and crumbled goat cheese. Pour remaining dressing over salad, top with sesame seeds and serve immediately.
