Spinach Salad with Cilantro Vinaigrette

- 1 Sweet potato
- 1 Tbsp butter
- 200 Spinach (cleaned)
- 1 Red onion
- 4 Tbsps olive oil
- 2 Tbsps White vinegar
- 2 Tbsps Vegetable broth
- 1 bunch cilantro
- 1 Tbsp Pine nuts
- salt
- freshly ground peppers
Preparation

Cook sweet potatoes in salted water for about 30 minutes. Drain and cool. Prepare vinaigrette by combining cilantro with pine nuts, vinegar and broth, add 2 tablespoons of oil slowly. Season with salt and pepper.

Peel and halve potatoes and onion, cut into thin strips. Heat butter in a pan and saute potatoes and onion briefly, remove from heat and cool. Add spinach and season with salt and pepper, arrange on plates. Drizzle with the vinaigrette and serve.
