Preparation steps

1.

Rinse the spinach and shake dry. Cut the chicken breast into bite-size pieces. Heat oil and butter in a pan and brown the chicken pieces. Sauté until cooked.

Peel and segment the oranges, catching any escaping juice in a bowl.

To make the dressing, combine olive oil, raspberry vinegar, and 3 tablespoons of the orange juice. Stir and season with salt and pepper. Peel the onion and cut into rings.
