Preparation steps
1.
Thaw wonton dough sheets at room temperature. Heat the chicken broth with 1 tbsp soy sauce and sake. For the filling, peel the ginger and garlic and chop both finely. Rinse the chicken breast fillet, pat dry and finely chop. Mix with the ginger, garlic, 1 tablespoon light soy sauce and cornstarch.
2.
On each dough sheet, place 1 tsp chicken filling in the center. Coat the edges with a small amount of water. Fold the dough sheets diagonally over the filling and press down well. Place the wontons in the hot broth and cook 6-8 minutes on low heat.
3.
Meanwhile, rinse and trim the spinach. Rinse the cilantro and shake dry. Add spinach to the soup just before serving. Serve the wonton soup in bowls, garnnished with cilantro.
