150 grams Bacon (in slices)
5 Tbsps olive oil
1 chopped onion
450 grams Frozen spinach (thawed)
6 eggs

Preparation steps

Rinse, peel and cut the potatoes into thin slices. Cut the bacon into strips and fry until crispy in a large pan, and remove it.

Fry the potatoes in a pan in 2 tablespoons of olive oil for about 10 minutes. Season with salt and pepper. Add the onions and continue to fry over low heat for about 10 minutes.

Squeeze and chop the spinach. Beat the eggs and season with salt and pepper. Take off the potatoes from the pan, and mix with the spinach, half the bacon and eggs.

Heat the remaining oil in a pan and pour the potato-egg mixture into it. Cook covered over low heat for about 8-10 minutes. Turn the omelette with the help of a large plate or lid, and cook for another 8-10 minutes. Remove from the pan and serve sprinkled with the remaining bacon.
