Preparation steps

1.

Rinse, trim, and dry the spinach. Clean thinly slice the mushrooms. Peel and finely dice the shallot. Peel and finely grate the carrot. Mix the shallots, vinegar, honey, and oil. Season to taste with salt and pepper. 

2.

Arrange the spinach and mushrooms on plates. Top the salad with the dressing. 

3.

Garnish the salad with the cress, and serve.
