- 1 prepared Pizza Bread
- 1 Tbsp olive oil
- ½ cup onions
- 3 cloves garlic cloves
- 6 cups Spinach
- 1 Tbsp lemon juice
- ¾ cup Feta (crumbled)
- 3 Tbsps Pine nuts
- 1 tsp dried oregano
- ¼ tsp salt
- ¼ tsp ground cayenne pepper
- 1 egg white (beaten)
- 2 tsps fennel seeds

Preparation steps
1.
Preheat oven to 450.

Heat olive oil in a large pan over med-high heat. Add onions and garlic, saute 2 minutes.
3.
Add 1/2 the spinach and cook down until well wilted. Add the other half and cook down. Remove pan from heat and stir in remaining ingredients.
4.
Cut dough in fours and roll out crusts on a sprayed baking sheet. Using a slotted spoon transfer spinach mixture to bottom half of each crust.
5.
Pull the top of crust over filling and pinch closed all the way around. Egg wash the top of each pastry with beaten egg white and sprinkle with fennel seeds.
6.
Bake for 15 minutes.
