- 2 Tbsps Oil
- 2 Tbsps butter
- 1 onion (chopped)
- 1 stalk Celery (chopped)
- 2 cloves garlic cloves (chopped)
- 1 tsp Cumin powder
- 1 tsp Coriander
- 26 ozs carrots (chopped)
- 4 cups vegetable stock
- salt
- peppers
- 1 Tbsp parsley
- 1 tsp ground Black pepper

Preparation steps
1.
Heat the oil and butter in a large pan and gently cook the onion and celery until soft but not brown.
2.
Add the garlic, cumin and coriander and cook for 2 minutes, then add the carrots and stir well.
3.
Pour over the stock, bring to a boil, then season with salt and pepper and simmer gently for 15-20 minutes or until the carrots are very tender.
4.
Blend with a hand blender until smooth then serve garnished with chopped parsley and pepper.
