- 2 Tbsps sunflower oil
- 1 large onion (finely chopped)
- 3 cloves garlic cloves (minced)
- 4 cups ground Beef (10% fat)
- 1 tsp ground Cumin
- 1 tsp paprika
- cayenne pepper
- 2 cups canned Kidney beans
- 2 cups canned Tomatoes
- 1 cup canned Sweet corn
- 3 cups low-sodium Beef stock
- 2 Tbsps pickled jalapeño (sliced)
- mini Flour tortillas (to serve)
- salt
- freshly ground Black pepper
Preparation steps

Heat the oil in a casserole dish set over a medium heat until hot. Add the onion, garlic, and a pinch of salt.

Fry for 4 minutes, stirring occasionally, and then add the mince, browning it well all over.

Add the spices, stir well, and cook for a further minute. Stir in the beans, tomatoes, sweetcorn, and stock.

Bring the stock to a simmer over an increased heat. Once simmering, reduce the heat slightly and cook for a further 30 - 40 minutes, stirring from time to time, until the chilli has thickened
5.
Adjust the seasoning to taste and ladle into bowls. Garnish with sliced jalapeños and serve with tortillas.
