Spanish-style Sausage and Bean Stew

500 grams wide Beans (yellow and green)
400 grams waxy potatoes
1 Red Bell pepper
5 Tomatoes
2 garlic cloves
2 Red chili peppers
2 Tbsps olive oil
1 Tbsp Tomato paste
500 milliliters Vegetable broth
salt
freshly ground peppers
400 grams Chorizo
4 stems thyme

Preparation

Rinse the beans, cut the ends and remove the strings. Cut into 3-4 cm (approximately 1 1/2-inch) long pieces. Peel the potatoes and dice. Rinse, trim and roughly chop the bell pepper. Scald the tomatoes in boiling water, rinse in cold water, peel, quarter, core and dice.

Peel garlic and chop finely. Rinse the chile peppers, trim, chop and sauté along with the garlic in hot oil. Stir in the tomato paste and deglaze with the broth. Add potatoes and beans and simmer, stirring occasionally, about 10 minutes.

Add the bell pepper and tomatoes to the pot, season with salt and pepper and simmer for another 10 minutes. Cut the chorizo into slices and mix into the stew with the thyme. Simmer about 5 minutes and season with salt and pepper. Serve with tortillas, if desired.
