600 grams Portobello Mushroom
4 Vine tomatoes
2 shallots
1 garlic clove
½ bunch Basil
6 Tbsps olive oil

Preparation steps

Cook the spaghetti in boiling salted water according to the package directions until al dente. Drain the spaghetti thoroughly in a colander.

Remove the leaves of the basil from the stems. Finely chop half of the leaves. Clean the mushrooms and cut in half if necessary. Peel and finely dice the shallots and garlic.Heat the oil in a frying pan, and sauté the shallots and garlic. Add the mushrooms, sauté briefly, then reduce the heat. Rinse and slice the tomatoes. Add to the pan and cook briefly. Season to taste with salt and pepper, and sprinkle with the chopped basil. Add the spaghetti to the pan, and toss until combined. Adjust the seasoning, then transfer to warmed plates. Garnish with parmesan cheese and serve.
