- 1 ⅕ liters clear Broth (finished product)
- 125 grams Pastry flour
- 2 eggs
- salt
- freshly ground peppers
- 1 heaping Tbsp freshly ground Poppy seeds
- ½ organic lemon (zest)
- 12 fresh Lemon balm

Preparation steps
1.
Mix the flour, eggs, salt, pepper and 3 tablespoons of water into a smooth batter. Add the poppy seeds, lemon zest and finely chopped lemon balm (setting a few leaves aside for the garnish). Beat the batter until it bubbles.

Bring salt water to a boil in a large pot.

Slice the dough into thin strips. Place in the water. Cook until the noodles float to the surface. Remove with a skimmer and drain well.
4.
Serve the noodles in hot soup, garnished with lemon balm.
