Preparation steps

1.
Combine cream cheese, whipped cream, vanilla, and mix on medium-high speed until smooth and incorporated. Set aside.
2.
In an approximately 4 ounce cup, spread a thin layer of the raspberry puree on bottom. Lightly sprinkle some of the crushed graham crackers, and then add about 1/4 cup of the cream cheese filling. Lightly sprinkle more crushed graham crackers and another thin layer of raspberry puree.
3.
Assemble the remaining cups by repeating the same layering process. Refrigerate for at least 1 hour before serving. Garnish with pistachios and one fresh raspberry per cup.
