Preparation steps

Peel mango, cut flesh away from pit and cut into wedges. Rinse and halve strawberries. Cut star fruit into slices. Mix with sugar, half the vanilla sugar and a little lemon juice to marinate. Whisk the egg whites with the remaining lemon juice until very stiff. Sprinkle egg whites with sugar and remaining vanilla sugar and combine.

Boil milk in a wide pan while stirring, then remove from heat. Float two tablespoons of beaten egg white in the hot milk and cook on each side 3 minutes until done. Remove the "snow-eggs" with a slotted spoon and place on a kitchen towel to drain.

For the caramel, heat 1 tablespoon sugar while stirring and melt until it is golden brown. Arrange fruit salad on plates, top with the snow-egg. Dip a fork into the caramel, pull strings and set aside. Garnish with lemon, dust with icing sugar and top with caramel strings.
