- 2 cups Chives (chopped)
- 2 Tbsps butter
- 2 shallots (finely chopped)
- 1 Tbsp flour
- 3 cups vegetable stock
- ⅜ cup cream (30% fat)

Preparation steps
1.
Melt the butter in a pan and gently cook the shallots until soft but not brown. Add the flour, cook for 2 minutes stirring all the time, then gradually add the stock.

Bring to a boil and simmer gently for 10 minutes then add the cream and heat through. Add three-quarters of the chives and remove from the heat.
3.
Blend to make a smooth soup, pass through a fine sieve and season with salt and pepper. Serve the soup garnished with the remaining chives.
