3 fresh eggs (lightly beaten)
cup all-purpose flour
salt (to taste)
freshly ground Black pepper (to taste)
4 Tbsps Sour cream
8 slices smoked Salmon
1 Tbsp fresh Basil (for garnish)

Preparation steps

1.
Wash the potatoes; peel and grate. In a mixing bowl, combine eggs, flour, salt, pepper and grated potatoes.
2.
Preheat a waffle iron. Following the manufacturer's instructions, prepare eight potato waffles. Keep warm.
3.
Place a waffle on 4 individual serving plates. Place a dollop of sour cream on top of each waffle, followed by 2 slices of smoked salmon; cover with remaining waffle.
4.
Garnish with fresh basil leaves. Serve.
