Preparation steps

1.

Divide salmon slices among four plates. Rinse, hull and quarter strawberries.

2.

Rinse arugula, spin dry, and tear into bite-sized pieces. Whisk together honey, mustard and vinegar.

3.

Gradually whisk in oil until emulsified. Season with salt. Mix together arugula and strawberries and divide over salmon slices in the middle of the plates.

4.

Sprinkle salads with freshly ground colored pepper and drizzle with honey-mustard dressing.
