Smoked Pork Chop with Vegetables
Cook potatoes in boiling water about 40 minutes or until tender.
Cut the stems with leaves from the beets and set aside. Rinse beets and cook in boiling salted water about 50 minutes or until tender. Drain and cool slightly. Peel beets and cut into slices.
Rinse the beet stems and leaves and coarsely chop.
Halve the leek lengthwise, rinse and thinly slice.
Simmer the pork chops in boiling water until heated through.
Saute leek and beet stems in butter for 1 minute. Add beet slices and saute briefly.
Cook, uncovered, about 8 minutes until the vegetables are tender and the liquid has evaporated. Season with mustard, salt, pepper and lemon juice.
Peel the hot potatoes and press through the ricer. Boil milk and pour over the potatoes. Stir in butter until smooth. Season with salt and nutmeg.
Serve pork chops with mashed potatoes and beets.
