- 8 Tbsps olive oil
- 2 cups baby peppers (assorted colours)
- ⅔ cup Padrón peppers (Padrón peppers)
- 12 Anchovy fillet
- 1 clove garlic cloves

Preparation steps

Preheat the oven to 220°C / 425°F.

Heat 4 tbsp oil in a large, oven-proof frying pan and fry all the peppers until they colour. Transfer the pan to the oven and roast for around 15 minutes.

For the dip, pat the anchovies dry and put 2 aside for garnish. Put the rest in a small saucepan. Add the remaining oil and press the garlic into the pan. Cook over a low heat, stirring, until the anchovies disintegrate and the dip has a creamy consistency. Season to taste with pepper and spoon into a small bowl. Garnish with the reserved anchovies.
4.
Arrange the peppers on a large plate with the dip and serve.
