- ⅔ cup butter (softened)
- ⅔ cup caster sugar
- 1 cup self-rising flour
- 3 large eggs
- 1 tsp Lemon extract
- candied lemons (chopped)
- 1 lemon (juice)
- 1 cup powdered sugar

Preparation steps
1.
Beat together the butter, caster sugar, flour, eggs, and lemon extract in a mixing bowl until pale and smooth; about 3 minutes.

Grease and line a 900 g | 2 lb loaf tin with greaseproof parchment paper.

Fold the chopped lemon slices into the batter and then spoon into the lined tin.
4.
Sit the tin in a slow cooker and cover it with aluminium foil. Cover the cooker with a lid.
5.
Cook on low for 1 hour, and then increase to high and cook for 90-105 minutes until golden on top and a cake tester comes out clean from its center.
6.
Remove the tin from the slow cooker and leave to cool on a wire rack.
7.
To make the icing: stir together the lemon juice and powdered sugar until smooth and pourable.
8.
Once the cake is cool, turn it out from the pan, and drizzle its top with the icing before serving.
