- 2 Pear
- 3 Tbsps lemon juice
- 300 grams Goat cheese
- 3 Tbsps Whipped cream
- 70 grams freshly grated pecorino romano
- 1 Tbsp green Olives (pitted)
- 1 Tbsp black Olives (pitted)
- 1 red chili pepper
- 1 bunch Basil
- 40 grams pecan or Walnut (coarsely chopped)
- 3 Tbsps Walnut oil
- salt
- freshly grated peppers
- chopped Nut (for garnish)
- Basil (for garnish)
Preparation steps

Coarsely chop the olives. Rinse the chile pepper, halve, core and chop. Combine the goat cheese, heavy cream, pecorino, olives and chile and season with pepper.

For the pesto: Puree the basil leaves with the nuts and walnut oil and season with salt and pepper.

Mix the lemon juice with a little water. Rinse the pears, remove the stem and core then cut into thin slices using a mandoline. Place immediately in lemon water.
4.
Arrange pear slices on serving dishes along with the goat cheese. Drizzle with a little pesto and sprinkle with chopped nuts and basil leaves.
