- 2 ⅔ cups striped, red Beets (such as Tonda di Chioggia, very thinly sliced)
- 1 Pear (cored & thinly sliced)
- ⅔ cup Goat cheese (crumbled)
- 1 handful assorted Fresh herbs e. g. basil, oregano (with flowers)
- 1 handful Baby greens (e. g. chicory, sorrel)
- 1 red chili pepper (seeds removed, diced)
- 4 Tbsps Cider vinegar
- 1 tsp clear honey
- 4 Tbsps sunflower oil
- salt
- peppers

Preparation steps
1.
Arrange the beetroot and pear slices on serving plates and sprinkle the goat's cheese over the top.
2.
Tear the herbs and salad leaves into small pieces and divide among the plates.
3.
Mix together the vinegar, honey, chilli and oil. Season to taste with salt and pepper and drizzle over the salads and serve immediately.
