8 cups Penne
¼ cup olive oil
2 Zucchini (cut into batons)
cup Bacon (chopped)
1 tsp thyme (finely chopped)
thyme (to garnish)
salt

Preparation steps

1.
Cook the pasta in a large saucepan of salted boiling water according to package instructions until 'al dente'; usually 8-10 minutes.

Meanwhile, heat the olive oil in a 9 inch heavy-based saucepan over a medium-high heat. Fry the bacon in the olive for 2-3 minutes until it starts to colour.

Add the courgette and stir well. Cook for a further 4-5 minutes over a reduced heat.

Drain the pasta and add to the bacon and courgette. Toss to combine well and season with salt, black pepper and chopped thyme.
5.
Serve in bowls and garnish with sprigs of thyme.
