Ingredients

4 cups Basil
1 garlic clove
coarse Sea salt
½ cup Pine nuts
1 cup olive oil (extra virgin)
0.333 cup Parmesan (grated)
½ cup pecorino romano (grated)
18 ozs Spaghetti

Preparation steps

1.
Place the basil leaves, garlic clove and some sea salt in a mixer and blend. Add the pine nuts and gradually add the olive oil. (It is very important to use a mild Ligurian olive oil). Do not puree the mixture too finely and do not leave the mixer on constantly. Finally, stir in the grated cheese.

Cook the spaghetti in plenty of boiling salted water until al dente.

Drain (keep some of the water) and mix with the pesto and 3-4 tbsp of the reserved cooking water. Arrange on plates and garnish with some grated Parmesan, serve immediately.
