- 3 Tbsps Yogurt
- 1 Tbsp lemon juice
- 6 ozs cooked Prawn
- salt
- freshly ground peppers
- ½ Cucumber
- 3 Tbsps Mayonnaise
- 1 handful Lollo Bionda (or leafy red lettuce)
- 6 Radish
- 8 slices Whole Wheat Bread
- 2 Tbsps Cress
- 8 slices Smoked salmon
- 2 Tbsps Dill
- lemon zest (for garnish)
Preparation

Combine the yogurt, lemon juice and shrimp and season with salt and pepper. Peel the cucumber, cut in half lengthwise, remove the seeds and cut into small cubes. Mix with the mayonnaise. Rinse the lettuce, shake dry and tear into pieces, if necessary. Rinse the radishes, trim and thinly slice 1/2 the radishes.

Spread the yogurt over 4 slices of bread, top with shrimp and radish and garnish with cress. Cut the remaining bread slices in half crosswise, spread the diced cucumber mayonnaise over top and add the smoked salmon. Sprinkle with dill and garnish with lemon zest to serve.
