Mix the flour with the sugar and salt in a bowl. Cut in the butter with a dough scraper. Knead into a smooth dough. Wrap in plastic and chill for 1 hour.

Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper. Roll the dough to about 1 cm (approximately 1/3 inch) rectangle and place on the baking sheet. Prick the dough in even rows with a fork. Bake until golden, about 20-30 minutes. Cut the shortbread into 2 x 8 cm (approximately 1 x 3 inches) strips while still hot. Cool on a wire rack.
Serve once cooled.
