Preparation steps

1.

Preheat the oven to 220°C (approximately 450°F).

2.

Blanch the tomatoes for few seconds. Peel, quarter, core and dice. Peel the onion and cut into small cubes. Rinse, halve, remove the seeds and ribs of the peppers. Grill the peppers skin side up until the skin is blistered black (about 10 minutes) in the preheated oven. Remove from the oven, remove the skin and dice. Rinse the chiles, halve, remove the seeds and ribs and chop. Peel the ginger and finely chop.

Peel, quarter, core and cube the apples and pears. Combine the peppers, chiles, ginger, onion, apples, pears, sugar, cider, mustard seeds and raisins in a saucepan. Cook over medium heat, stirring. Cover and let simmer for 40 minutes. Season with pepper and vinegar. While hot, pour into jars and close tightly.
