Preparation steps

Rinse the chicken breasts, pat dry and cut into 2-3 cm (approximately 3/4-1 1/4 inch) cubes. Rinse the lemon with hot water, wipe dry and finely grate zest. Squeeze the juice from the lemon. Rinse the chile pepper, cut in half lengthwise, remove seeds and white ribs, and finely chop. Halve the vanilla bean lengthwise and scrape seeds with a sharp knife. 

In a bowl, whisk the lemon zest and juice with the chile, honey, vanilla seeds and 2 tabespoons of the oil. Season with salt to taste. Stir in the chicken. Cover and allow to marinate in the refrigerator for 30 minutes.

Place the sesame seeds in a deep plate. Heat the reamining oil in a large skillet. Roll the chicken into the sesame seeds to coat. Thread 3-4 cubes on short wooden skewers. Add the skewers to the skillet and sear until golden and cooked through, about 5 minutes. Sprinkle with the remaining sesame seeds and basil. Serve with vegetable fried rice if desired.
