Preparation

Bring the water to a boil, then let cool to 70°C (approximately 160°F). Add the tea to a pot, then cover with the water, and let steep for 5-10 minutes (if you want a deeper color, you'll want to steep it for the whole time). In the last 2 minutes of steeping, add the mint. Pass the tea through a strainer, and sweeten to taste with the sugar. Let the tea cool, then transfer into glasses.

The tea can be enjoyed room temperature or chilled.
