- 8 medium sized yellow onion
- 300 grams mixed Shellfish (frozen)
- 1 small Zucchini
- 4 Tbsps olive oil
- salt
- freshly ground peppers
- 2 Tbsps lemon juice
Preparation

Peel the onions and cook for 15-20 minutes, depending on the size, in a preheated oven at 180°C (approximately 360°F). Remove onions from oven, cut off the top and carefully hollow out with a teaspoon. Finely chop the removed interior of 1-2 onions.

Rinse the zucchini and cut into small cubes.

Thaw seafood, then cook in hot oil for 2 minutes, making sure all sides are evenly cooked. Season with salt and pepper, sprinkle with lemon juice, add zucchini and chopped onion and continue to cook for 1-2 minutes. Fill onions with seafood and vegetable mixture, cook in the oven for an additional 5 minutes and serve.
