- 2 sheets white gelatin
- 2 egg yolks
- 2 Tbsps honey
- 1 packet Vanilla sugar
- 100 milliliters sea buckthorn berry juice (unsweetened)
- 500 grams Greek yogurt
- 1/2 Limes (juiced)
- 2 tsps chopped Pistachio
Preparation
1.
Soak the gelatin in cold water.

Mix egg yolk, honey, vanilla and sea buckthorn juice in a bowl. Stir in yogurt. Squeeze gelatin and dissolve in the lime juice in a pot over very low heat.

Stir dissolved gelatin in a thin stream into the sea buckthorn yogurt. Refrigerate until the mixture has thickened.
4.
Pipe yogurt into glasses. Chill before serving. To serve, sprinkle the yogurt with pistachios and garnish the rims of the glasses with a slice of lemon, if desired.
