- 2 tsps olive oil
- 2 cloves garlic cloves (chopped)
- 1 medium onion (finely chopped)
- 2 ribs Celery (finely chopped)
- 3 ½ cups Beef broth (or chicken broth)
- 2 cups canned cannellini beans (rinsed and drained)
- 4 carrots (peeled and sliced)
- 2 bay leaves
- 1 tsp ground Cumin
- 5 ozs Savoy cabbage (coarsely sliced)
- salt (to taste)
- peppers (to taste)
- fresh Basil (for garnish)

Preparation steps
1.
Heat olive oil in large soup pot over medium heat. Add garlic and onions and celery; saute until fragrant and tender; approximately 5 minutes.

Stir in beef or chicken broth, cannellini beans, carrots, bay leaves and cumin. Bring to boil. Reduce heat and simmer for 20 minutes.

Remove the bay leaves, and add the cabbage, season with salt and pepper and cook for another 6 or 7 minutes or until cabbage leaves are soft.
4.
Remove from heat, check the seasoning, ladle into bowls. Garnish with fresh basil, if desired.
