Sauerkraut Apple Salad with Walnuts

- 11 ozs Sauerkraut
- 1 tart Apple
- ¾ oz Walnut
- 2 Tbsps Apple juice
- 1 Tbsp lemon juice
- 1 tsp Pumpkin seed oil (or walnut oil)
Drain the sauerkraut in a sieve. Remove core from apple, quarter and cut into very thin slices.
Coarsely chop walnuts. Mix sauerkraut with apple and walnut pieces. Then marinate sauerkraut salad with apples and walnuts with apple and lemon juice and pumpkin seed oil.

With wholemeal bread or pastries, the sauerkraut salad with apples and walnuts is also an excellent main course. You can also use olive oil or canola oil instead of pumpkin seed oil.
